Ingredients

- 2 boneless chicken
- 1 can black beans, drained
- 1 can corn, drained
- 1 can diced tomatoes
- 4 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 lime, juiced
- Fresh cilantro for garnish
- Tortilla strips for topping
Instructions
- Place chicken in the crockpot.
- Add black beans, corn, diced tomatoes, onion, garlic, cumin, chili powder, paprika, salt, and pepper.
- Pour in chicken broth and stir.
- Cook on low for 6 hours or high for 3 hours.
- Remove chicken, shred it, and return to the crockpot.
- Stir in lime juice.
- Serve hot with tortilla strips and cilantro.
Notes
- For extra spice, add jalapeños.
- Use rotisserie chicken for quicker prep.
- Freeze leftovers for easy meals.
