Ingredients

  • 1 cup sliced zucchini
  • 1 cup chopped bell peppers
  • 1 cup chopped onions
  • 1 cup diced tomatoes
  • 1/2 cup grated cheese
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried oregano

Instructions

  1. Preheat oven to 375°F.
  2. Chop all vegetables into bite-sized pieces.
  3. Toss vegetables with olive oil, salt, pepper, and oregano.
  4. Transfer vegetables to a baking dish.
  5. Bake for 45 minutes or until tender.
