Ingredients

- 2 cups diced potatoes
- 1 cup chopped carrots
- 1 cup sliced zucchini
- 1 cup chopped bell peppers
- 1 cup chopped onions
- 1 cup diced tomatoes
- 1/2 cup grated cheese
- 1/4 cup olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dried oregano
Instructions
- Preheat oven to 375°F.
- Chop all vegetables into bite-sized pieces.
- Toss vegetables with olive oil, salt, pepper, and oregano.
- Transfer vegetables to a baking dish.
- Bake for 45 minutes or until tender.
- Sprinkle grated cheese on top and bake for another 5 minutes.
- Serve warm.
