Ingredients

- 1 medium cabbage, chopped
- 2 carrots, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 2 potatoes, cubed
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1 tsp dried thyme
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until softened.
- Stir in carrots and cook for 3 minutes.
- Add cabbage, potatoes, diced tomatoes, vegetable broth, salt, pepper, and thyme.
- Bring to a boil, then reduce heat and simmer for 25 minutes.
- Serve hot.
