- 2 boneless, skinless chicken
- 1 cup pineapple chunks
- 1/4 cup low-sodium teriyaki sauce
- 1 tbsp olive oil
- 1 cup cooked brown rice
- 1/2 cup sliced bell peppers
- 1/2 cup sliced red onions
- 1 tbsp sesame seeds
- 1 tsp minced garlic
Instructions
- Heat olive oil in a pan over medium heat.
- Add chicken and cook for 5-6 minutes per side until browned.
- Add garlic, bell peppers, and red onions. Cook for 2-3 minutes.
- Pour teriyaki sauce over the chicken and vegetables. Stir well.
- Add pineapple chunks and cook for another 2 minutes.
- Serve over brown rice and sprinkle with sesame seeds.

- Use fresh pineapple for better flavor.
- Adjust teriyaki sauce to taste.
