Ingredients

- 2 boneless, skinless chicken
- 1 cup pineapple chunks
- 1/4 cup low-sodium teriyaki sauce
- 1 cup brown rice
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp ginger powder
- 1/2 cup diced bell peppers
- 1/4 cup sliced green onions
Instructions
- Cook brown rice according to package instructions.
- Heat olive oil in a pan over medium heat.
- Add chicken and cook for 6 minutes per side.
- Add teriyaki sauce, garlic powder, and ginger powder to the pan.
- Mix well and cook for another 3 minutes.
- Add pineapple chunks and bell peppers.
- Cook for 2 more minutes.
- Serve over rice and top with green onions.

- Use fresh pineapple for better flavor.
- Adjust teriyaki sauce to taste.
- Add vegetables like carrots or broccoli if desired.
