- 4 large bell peppers (any color)
- 1 cup cooked rice
- 1 cup diced tomatoes
- 1 cup chopped spinach
- 1/2 cup diced onions
- 1/2 cup diced carrots
- 1/4 cup olive oil
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- In a pan, heat olive oil and sauté onions, carrots, and spinach.
- Mix cooked rice, sautéed vegetables, tomatoes, garlic powder, salt, and pepper.
- Stuff the bell peppers with the rice mixture.
- Place peppers in a baking dish and bake for 25-30 minutes.
- Serve warm.
Notes
- Use brown rice for extra fiber.
- Add cheese on top for extra flavor if desired.
- Store leftovers in the fridge for up to 3 days.
