Ingredients

  • 4 large bell peppers (any color)
  • 1 cup cooked rice
  • 1 cup diced tomatoes
  • 1 cup chopped spinach
  • 1/2 cup diced onions
  • 1/2 cup diced carrots
  • 1/4 cup olive oil
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a pan, heat olive oil and sauté onions, carrots, and spinach.
  4. Mix cooked rice, sautéed vegetables, tomatoes, garlic powder, salt, and pepper.
  5. Stuff the bell peppers with the rice mixture.
  6. Place peppers in a baking dish and bake for 25-30 minutes.
  7. Serve warm.
