Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 bell pepper, diced
  • 1 cup spinach
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, bring water to a boil and add quinoa.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Heat olive oil in a pan and sauté garlic and bell pepper.
  5. Add spinach and cook until wilted.
  6. Mix cooked quinoa with vegetables and season with salt and pepper.
