Ingredients

- 1 cup quinoa
- 2 cups water
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1 bell pepper, diced
- 1 cup spinach
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Rinse quinoa under cold water.
- In a pot, bring water to a boil and add quinoa.
- Reduce heat, cover, and simmer for 15 minutes.
- Heat olive oil in a pan and sauté garlic and bell pepper.
- Add spinach and cook until wilted.
- Mix cooked quinoa with vegetables and season with salt and pepper.
Notes
- Use any vegetables you prefer.
- Store leftovers in the fridge for up to 3 days.
