Ingredients

- 2 medium cucumbers, thinly sliced
- 2 large carrots, grated
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Wash and slice the cucumbers thinly.
- Grate the carrots using a medium grater.
- Chop the fresh parsley finely.
- In a large bowl, combine the cucumbers, carrots, and parsley.
- Drizzle with olive oil and lemon juice.
- Sprinkle with salt and black pepper.
- Toss everything together until well mixed.
- Serve immediately or chill for 30 minutes before serving.
Notes
- For extra flavor, add a pinch of dried oregano or mint.
- Store leftovers in an airtight container in the fridge for up to 2 days.
- You can substitute lime juice for lemon juice if preferred.
