Ingredients

- 1 lb boneless, skinless chicken
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 cup corn (fresh or frozen)
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Place chicken at the bottom of the crockpot.
- Add black beans, kidney beans, diced tomatoes, corn, onion, bell pepper, and garlic.
- Pour in chicken broth.
- Season with chili powder, cumin, paprika, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred the chicken with two forks before serving.
Notes
- You can add more vegetables like zucchini or carrots.
- For extra heat, add diced jalapeños or cayenne pepper.
- Top with avocado, cilantro, or shredded cheese before serving.
