Ingredients

- 1 pound lean ground beef
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 cup brown rice
- 2 cups low-sodium beef broth
- 1 cup frozen peas
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion, garlic, and bell pepper. Cook until softened.
- Add ground beef and cook until browned. Drain excess fat.
- Season with salt, black pepper, and paprika.
- Stir in brown rice and beef broth. Bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Add frozen peas and cook for 5 more minutes.
- Serve hot.

- Use lean beef to reduce fat content.
- You can substitute brown rice with quinoa for a different texture.
