- 1.5 lbs lean beef stew meat, cut into cubes
- 2 cups low-sodium beef broth
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, diced
- 3 garlic cloves, minced
- 2 potatoes, cubed
- 1 tsp dried thyme
- 1 tsp paprika
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Place beef cubes at the bottom of the crockpot.
- Add carrots, celery, onion, garlic, and potatoes.
- Pour beef broth over the ingredients.
- Season with thyme, paprika, bay leaf, salt, and pepper.
- Cover and cook on low for 7-8 hours or high for 4-5 hours.
- Remove bay leaf before serving.
Notes
- For extra flavor, brown the beef before adding to the crockpot.
- Add more vegetables like zucchini or mushrooms if desired.
- Store leftovers in an airtight container for up to 3 days.
