Ingredients

- 200g feta cheese
- 250g cherry tomatoes
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 2 cloves garlic, minced
- 250g pasta
- 2 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 200°C (400°F).
- Place the feta cheese in the center of a baking dish.
- Arrange the cherry tomatoes, bell pepper, and zucchini around the feta.
- Drizzle with olive oil and sprinkle minced garlic, oregano, salt, and pepper over the vegetables and feta.
- Bake for 25-30 minutes until the vegetables are tender and the feta is soft.
- While baking, cook the pasta according to package instructions.
- Once baked, mix the melted feta and roasted vegetables with the cooked pasta.
- Garnish with fresh basil before serving.
Notes
- Use whole wheat pasta for extra fiber.
- Add chili flakes for a spicy kick.
- Store leftovers in an airtight container for up to 2 days.
