Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup shredded coconut
- 1 cup crushed pineapple (drained)
- 1/2 cup coconut milk
- 1/2 cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch cake pan.
- Mix flour, sugar, baking powder, baking soda, and salt in a bowl.
- In another bowl, whisk eggs, coconut milk, oil, and vanilla.
- Combine wet and dry ingredients. Fold in pineapple and coconut.
- Pour batter into the pan. Bake for 30-35 minutes or until a toothpick comes out clean.
- Cool before serving.
Notes
- Use fresh pineapple for better flavor.
- Toast coconut for extra crunch.
- Store in an airtight container for up to 3 days.
