A delicious Greek-inspired meatball bowl packed with flavor and nutrients.


Ingredients

Scale
  • 500g ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 50g breadcrumbs
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 200g cooked rice
  • 100g cherry tomatoes
  • 50g feta cheese
  • 1 cucumber, diced
  • 2 tbsp olive oil

Instructions

  1. Mix beef, onion, garlic, egg, breadcrumbs, oregano, salt and pepper in a bowl
  2. Form into small meatballs
  3. Heat oil in pan and cook meatballs until browned
  4. Prepare rice according to package instructions
  5. Chop vegetables and prepare toppings
  6. Assemble bowls with rice, meatballs and toppings
  7. Serve immediately

  • Can substitute beef with lamb or turkey
  • Add tzatziki sauce for extra flavor
