Ingredients

  • 1 lb baby potatoes, halved
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Season chicken with salt, pepper, and paprika.
  2. Heat olive oil in a skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side until golden. Remove and set aside.
  3. In the same skillet, melt butter. Add potatoes and cook for 10 minutes, stirring occasionally.
  4. Add garlic and thyme. Cook for 1 minute until fragrant.
  5. Return chicken to the skillet. Cover and cook for 10-12 minutes until chicken is cooked through and potatoes are tender.
  6. Sprinkle with parsley before serving.
