A classic fruit cake recipe perfect for Christmas. Packed with dried fruits, nuts, and warm spices for a festive treat.

- 250g mixed dried fruit (raisins, currants, sultanas)
- 100g chopped dried apricots
- 100g chopped dates
- 100g glacé cherries
- 100g chopped walnuts
- 175g unsalted butter
- 175g brown sugar
- 3 eggs
- 175g all-purpose flour
- 1 tsp mixed spice
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 2 tbsp brandy or orange juice
Instructions
- Preheat oven to 150°C. Grease and line a 20cm cake tin.
- Combine dried fruits, cherries, and nuts in a bowl.
- Cream butter and sugar until fluffy. Beat in eggs one at a time.
- Sift flour and spices, then fold into the butter mixture.
- Stir in the fruit mixture and brandy until well combined.
- Spoon into the tin, smooth the top, and bake for 2-2.5 hours.
- Cool in the tin for 15 minutes before transferring to a wire rack.
Notes
- Store in an airtight container for up to a month.
- For extra flavor, brush with brandy weekly before serving.
- Wrap in parchment paper and foil for longer storage.
