- 2 cups frozen black-eyed peas
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups water or vegetable broth
Instructions
- Heat olive oil in a pot over medium heat.
- Add diced onion and cook until soft, about 3 minutes.
- Stir in minced garlic and cook for 30 seconds.
- Add frozen black-eyed peas, smoked paprika, salt, and black pepper.
- Pour in water or broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 25-30 minutes until peas are tender.
- Adjust seasoning if needed and serve warm.
Notes
- For extra flavor, add a bay leaf while cooking.
- If using canned black-eyed peas, reduce cooking time to 10-15 minutes.
- Store leftovers in an airtight container for up to 3 days.
