Ingredients

- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 2 cloves garlic (minced)
- 1 tbsp butter
- 1 cup red wine
- 1 sprig rosemary
- 200g mashed potatoes
- 100g steamed asparagus
Instructions
- Season the beef fillets with salt and pepper.
- Heat olive oil in a pan over medium-high heat.
- Sear the fillets for 3 minutes per side for medium-rare.
- Add butter, garlic, and rosemary to the pan.
- Baste the fillets with the melted butter for 1 minute.
- Remove the fillets and let them rest.
- Deglaze the pan with red wine and reduce by half.
- Plate the fillets with mashed potatoes and asparagus.
- Drizzle the reduced wine sauce over the fillets.

- Let the beef rest for 5 minutes before slicing.
- Use a meat thermometer for precise doneness.
- Pair with a full-bodied red wine.
