- 1 lb baby potatoes
- 1 lb asparagus, trimmed
- 1/2 cup red wine
- 2 tbsp butter
Instructions
- Preheat oven to 400°F.
- Season beef with salt, pepper, garlic, rosemary, and thyme.
- Heat olive oil in an oven-safe pan over medium-high heat.
- Sear beef on all sides until browned, about 3 minutes per side.
- Add potatoes to the pan around the beef.
- Transfer pan to the oven and roast for 25 minutes.
- Add asparagus to the pan and roast for 10 more minutes.
- Remove beef from the pan and let rest for 10 minutes.
- Deglaze the pan with red wine and reduce by half.
- Stir in butter to finish the sauce.
- Slice beef and serve with vegetables and sauce.
