Description
A classic British dessert with layers of meringue, whipped cream, and fresh strawberries.

- 4 large egg whites
- 200g caster sugar
- 300ml double cream
- 250g fresh strawberries, hulled and sliced
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 120°C (100°C fan). Line a baking tray with parchment paper.
- Whisk the egg whites until stiff peaks form. Gradually add the sugar, whisking until glossy.
- Spoon the meringue onto the tray in small nests. Bake for 1 hour, then turn off the oven and let them cool inside.
- Whip the cream with vanilla extract until soft peaks form.
- Crush the meringue lightly and fold into the cream with strawberries.
- Serve immediately in glasses or bowls.
Notes
- Use fresh strawberries for the best flavor.
- Store leftovers in the fridge for up to 1 day.
- Replace strawberries with other berries if preferred.
