Ingredients

- 1 cup quinoa
- 1 can black beans (15 oz)
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1 lime, juiced
- 2 tbsp olive oil
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Rinse quinoa and cook according to package instructions.
- Drain and rinse black beans, then heat in a pan with cumin.
- Mix cooked quinoa, black beans, cherry tomatoes, and avocado in a bowl.
- Drizzle with lime juice and olive oil.
- Season with salt and pepper.
- Serve immediately.
Notes
- Use fresh lime juice for best flavor.
- Add cilantro if desired.
- Store leftovers in an airtight container for up to 2 days.
