- 4 cups water
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bay leaf
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
Instructions
- Rinse the black-eyed peas under cold water.
- In a large pot, heat olive oil over medium heat.
- Add diced onion and cook until softened.
- Add minced garlic and cook for 1 minute.
- Pour in water and add black-eyed peas, bay leaf, salt, pepper, and smoked paprika.
- Bring to a boil, then reduce heat to low.
- Simmer uncovered for 45-60 minutes, or until peas are tender.
- Remove bay leaf before serving.
