Ingredients

- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 tsp Cajun seasoning
- 1 can diced tomatoes
- 2 cups chicken broth
- 1 cup heavy cream
- 8 oz penne pasta
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add sausage and cook until browned, about 5 minutes.
- Stir in onion, garlic, and bell pepper. Cook for 3 minutes.
- Sprinkle Cajun seasoning and mix well.
- Pour in diced tomatoes, chicken broth, and heavy cream.
- Add pasta and stir to combine.
- Bring to a boil, then reduce heat and simmer for 12-15 minutes until pasta is tender.
- Season with salt and pepper.
- Stir in Parmesan cheese.
- Garnish with fresh parsley before serving.
