- 2 cups quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 avocado, sliced
- 1/4 cup fresh parsley, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water and cook according to package instructions.
- While quinoa cooks, chop tomatoes, cucumber, and avocado.
- Once quinoa is done, let it cool slightly.
- Mix quinoa with vegetables in a large bowl.
- Drizzle with olive oil and lemon juice.
- Season with salt and pepper.
- Toss gently and serve.
