- 1 lb boneless, skinless chicken
- 1 cup diced tomatoes
- 1 cup chopped bell peppers
- 1 cup sliced carrots
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup low-sodium chicken broth
Instructions
- Place chicken in the crockpot.
- Add diced tomatoes, bell peppers, carrots, onion, and garlic.
- Sprinkle oregano, cumin, salt, and black pepper over the ingredients.
- Pour chicken broth into the crockpot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Shred the chicken with a fork and mix well before serving.
Notes
- You can add other vegetables like zucchini or spinach.
- Serve with brown rice or quinoa for a complete meal.
