Ingredients

  • 4 boneless, skinless chicken
  • 1 cup pineapple chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small red onion, sliced
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp ground ginger
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix soy sauce, honey, olive oil, garlic powder, and ground ginger.
  3. Place chicken on a sheet pan and pour half the sauce over them.
  4. Add pineapple chunks, bell peppers, and red onion around the chicken.
  5. Pour the remaining sauce over the vegetables.
  6. Bake for 25-30 minutes until chicken is cooked through.
  7. Serve hot over rice or quinoa.
