Ingredients

- 4 boneless, skinless chicken
- 1 cup pineapple chunks
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small red onion, sliced
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp ground ginger
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix soy sauce, honey, olive oil, garlic powder, and ground ginger.
- Place chicken on a sheet pan and pour half the sauce over them.
- Add pineapple chunks, bell peppers, and red onion around the chicken.
- Pour the remaining sauce over the vegetables.
- Bake for 25-30 minutes until chicken is cooked through.
- Serve hot over rice or quinoa.
Notes
- You can use fresh or canned pineapple.
- Adjust honey for sweetness preference.
- Add chili flakes for extra heat.
