Ingredients

  • 4 boneless, skinless chicken
  • 1 cup uncooked long-grain white rice
  • 1 packet (1 oz) French onion soup mix
  • 2 cups water
  • 1 cup shredded mozzarella cheese
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, garlic powder, and onion powder.
  3. Brown chicken for 3-4 minutes per side, then remove from skillet.
  4. In the same skillet, add rice, water, and French onion soup mix. Stir to combine.
  5. Transfer the rice mixture to a 9×13-inch baking dish. Place chicken on top.
  6. Cover with foil and bake for 25 minutes.
  7. Remove foil, sprinkle with mozzarella cheese, and bake uncovered for 5-10 more minutes until cheese is melted and bubbly.
