- 1 lb chicken breast
- 2 cups diced potatoes
- 1 cup chopped carrots
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Place chicken breast at the bottom of the crockpot.
- Add potatoes, carrots, and onion.
- Sprinkle garlic, salt, pepper, and thyme over the ingredients.
- Pour chicken broth over everything.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred chicken before serving.
Notes
- You can use frozen chicken, but cooking time may increase.
- Add more vegetables if desired.
- Store leftovers in an airtight container for up to 3 days.
