- 1.5 lbs boneless, skinless chicken , diced
- 1 cup diced onions
- 2 cloves garlic, minced
- 1 cup diced bell peppers
- 1 can (14 oz) diced tomatoes
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup chicken broth
- 1 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium heat. Sauté onions, garlic, and bell peppers for 3-4 minutes.
- Add diced chicken and cook until lightly browned, about 5 minutes.
- Transfer the mixture to the crockpot.
- Add diced tomatoes, cumin, paprika, salt, black pepper, and chicken broth. Stir well.
- Cover and cook on low for 4-5 hours or on high for 2-3 hours.
- Serve warm with rice or tortillas.
Notes
- For extra flavor, add a dash of hot sauce or chili powder.
- Can be stored in the refrigerator for up to 3 days.
- Freezes well for up to 1 month.
