Ingredients

  • 2 cups water
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, sliced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 cup chopped fresh parsley

Instructions

  1. Rinse quinoa under cold water.
  2. Cook quinoa in 2 cups of water for 15 minutes or until tender.
  3. Heat olive oil in a pan and sauté garlic, bell pepper, and zucchini for 5 minutes.
  4. Mix cooked quinoa with sautéed vegetables.
  5. Season with salt, black pepper, and paprika.
  6. Garnish with fresh parsley and serve warm.
