Ingredients

- 1 cup quinoa
- 2 cups water
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1 bell pepper, diced
- 1 zucchini, sliced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/4 cup chopped fresh parsley
Instructions
- Rinse quinoa under cold water.
- Cook quinoa in 2 cups of water for 15 minutes or until tender.
- Heat olive oil in a pan and sauté garlic, bell pepper, and zucchini for 5 minutes.
- Mix cooked quinoa with sautéed vegetables.
- Season with salt, black pepper, and paprika.
- Garnish with fresh parsley and serve warm.
