- 2 cups basmati rice
- 1 lb chicken, cubed
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 can (14 oz) diced tomatoes
- 1 cup coconut milk
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp vegetable oil
- Fresh cilantro for garnish
Instructions
- Heat oil in a pan and sauté onion, garlic, and ginger until soft.
- Add chicken and cook until lightly browned.
- Transfer everything to the crockpot.
- Add diced tomatoes, coconut milk, and spices.
- Stir well, cover, and cook on low for 6 hours.
- Serve over cooked basmati rice and garnish with cilantro.
Notes
- Adjust spice levels to your preference.
- For extra richness, use full-fat coconut milk.
- Leftovers taste even better the next day.
