A simple and flavorful crockpot chicken piccata recipe perfect for busy days. Tender chicken cooked in a tangy lemon-caper sauce.

- 4 boneless, skinless chicken
- 1/2 cup chicken broth
- 1/4 cup lemon juice
- 2 tbsp capers, drained
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp cornstarch
- 2 tbsp water
- 2 tbsp fresh parsley, chopped
Instructions
- Place chicken in the crockpot.
- Add chicken broth, lemon juice, capers, garlic, oregano, salt, and pepper.
- Cover and cook on low for 4-5 hours or high for 2-3 hours.
- Remove chicken and keep warm.
- Mix cornstarch and water in a small bowl, then stir into the crockpot.
- Cover and cook on high for 15 minutes until sauce thickens.
- Return chicken to the crockpot and coat with sauce.
- Sprinkle with parsley before serving.
Notes
- Serve over pasta or mashed potatoes.
- For extra flavor, add a splash of white wine.
- Leftovers keep well in the fridge for up to 3 days.
