A simple and flavorful crockpot chicken piccata recipe perfect for busy days. Tender chicken cooked in a tangy lemon-caper sauce.


Ingredients

  • 4 boneless, skinless chicken
  • 1/2 cup chicken broth
  • 1/4 cup lemon juice
  • 2 tbsp capers, drained
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp cornstarch
  • 2 tbsp water
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Place chicken in the crockpot.
  2. Add chicken broth, lemon juice, capers, garlic, oregano, salt, and pepper.
  3. Cover and cook on low for 4-5 hours or high for 2-3 hours.
  4. Remove chicken and keep warm.
  5. Mix cornstarch and water in a small bowl, then stir into the crockpot.
  6. Cover and cook on high for 15 minutes until sauce thickens.
  7. Return chicken to the crockpot and coat with sauce.
  8. Sprinkle with parsley before serving.
