Ingredients

  • 2 cups baby carrots
  • 2 cups diced potatoes
  • 1 cup chopped celery
  • 1 cup chopped onions
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup low-sodium chicken broth

Instructions

  1. Place chicken at the bottom of the crockpot.
  2. Add carrots, potatoes, celery, and onions on top.
  3. Sprinkle garlic powder, thyme, salt, and pepper over the ingredients.
  4. Pour chicken broth into the crockpot.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
