- 4 boneless, skinless chicken
- 2 cups baby carrots
- 2 cups diced potatoes
- 1 cup chopped celery
- 1 cup chopped onions
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup low-sodium chicken broth
Instructions
- Place chicken at the bottom of the crockpot.
- Add carrots, potatoes, celery, and onions on top.
- Sprinkle garlic powder, thyme, salt, and pepper over the ingredients.
- Pour chicken broth into the crockpot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Serve hot and enjoy.
Notes
- If you prefer softer vegetables, cook on low for the full 8 hours.
- For extra flavor, add a splash of lemon juice before serving.
- Leftovers can be stored in the fridge for up to 3 days.
