A simple and delicious crock pot chuck roast recipe that cooks tender meat with vegetables for a hearty meal.
Ingredients

- 3–4 lb chuck roast
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 4 carrots, chopped
- 4 potatoes, cubed
- 1 onion, sliced
- 2 cups beef broth
Instructions
- Heat olive oil in a pan and sear the chuck roast on all sides.
- Season the roast with salt, pepper, garlic powder, onion powder, and paprika.
- Place chopped carrots, potatoes, and onion in the crock pot.
- Add the seared roast on top of the vegetables.
- Pour beef broth over the roast.
- Cover and cook on low for 8 hours or high for 4-5 hours.
- Shred or slice the meat before serving.
Notes
- For extra flavor, add fresh herbs like rosemary or thyme.
- If the roast is too fatty, trim excess fat before cooking.
- Leftovers can be stored in the fridge for up to 3 days.
