- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) corn, drained
- 1 can (15 oz) black beans, drained and rinsed
- 4 cups beef broth
- 1 cup heavy cream
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Brown the ground beef in a large pot over medium heat.
- Add the onion and garlic, cooking until softened.
- Stir in the diced tomatoes, corn, black beans, and beef broth.
- Season with chili powder, cumin, salt, and pepper.
- Simmer for 15 minutes.
- Stir in the heavy cream and heat through.
- Serve hot.
Notes
- For a spicier version, add diced jalapeños.
- Top with shredded cheese or sour cream if desired.
