- 3–4 lbs chuck roast
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 cup beef broth
- 2 carrots, chopped
- 2 potatoes, diced
- 1 onion, sliced
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Season chuck roast with salt, pepper, garlic powder, onion powder, and smoked paprika.
- Sear the roast on all sides until browned, about 3-4 minutes per side.
- Place chopped carrots, potatoes, and onions in the crock pot.
- Transfer the seared roast on top of the vegetables.
- Pour beef broth over the roast.
- Cover and cook on low for 8 hours or high for 4-5 hours until tender.
- Shred or slice the roast and serve with vegetables and juices.
Notes
- For deeper flavor, marinate the roast overnight.
- Add herbs like rosemary or thyme for extra aroma.
- Store leftovers in an airtight container for up to 3 days.
