Ingredients

- 4 boneless, skinless chicken
- 2 cups fresh spinach
- 1 can (14 oz) diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup chicken broth
Instructions
- Place chicken at the bottom of the crockpot.
- Add spinach, diced tomatoes, onion, and garlic.
- Sprinkle oregano, basil, salt, and pepper over the ingredients.
- Pour chicken broth over everything.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred chicken with forks before serving.
Notes
- You can substitute fresh spinach with frozen spinach if needed.
- Add a sprinkle of Parmesan cheese before serving for extra flavor.
