- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup cooked rice
- 1 cup shredded cheese
- 1/2 cup salsa
- 1 tsp cumin
- 1 tsp chili powder
- 4 large flour tortillas
Instructions
- Preheat oven to 375°F.
- Mix chicken, black beans, corn, rice, salsa, cumin, and chili powder in a bowl.
- Layer tortillas in a baking dish, covering the bottom.
- Spread half the chicken mixture over the tortillas.
- Sprinkle half the cheese on top.
- Repeat layers with remaining tortillas, chicken mixture, and cheese.
- Bake for 20-25 minutes until cheese is melted and bubbly.
Notes
- Use rotisserie chicken for extra convenience.
- Add jalapeños for a spicy kick.
