Ingredients

- 2 lbs boneless, skinless chicken
- 4 cups broccoli florets
- 1 cup chicken broth
- 1/2 cup soy sauce
- 1/4 cup honey
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tbsp cornstarch
- 2 tbsp water
Instructions
- Place chicken in the crockpot.
- Add broccoli, chicken broth, soy sauce, honey, garlic, and ginger.
- Cover and cook on low for 4-5 hours or high for 2-3 hours.
- Remove chicken and shred it with forks.
- Mix cornstarch and water in a small bowl, then stir into the crockpot.
- Return shredded chicken to the crockpot and cook for 10-15 minutes until sauce thickens.
- Serve over rice or noodles.
Notes
- For extra flavor, add red pepper flakes.
- Fresh broccoli works best, but frozen can be used.
- Adjust honey or soy sauce to taste.
