A refreshing and easy-to-make California roll cucumber salad, perfect for summer.
Ingredients

- 2 large cucumbers, thinly sliced
- 1 avocado, diced
- 1 cup imitation crab meat, shredded
- 1/4 cup mayonnaise
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1 tsp soy sauce
- 1/2 tsp sesame oil
- 1 tbsp sesame seeds
- 1 sheet nori, cut into thin strips
Instructions
- In a bowl, mix mayonnaise, rice vinegar, sugar, soy sauce, and sesame oil.
- Add sliced cucumbers, diced avocado, and shredded imitation crab meat to the bowl.
- Toss gently to coat everything evenly.
- Sprinkle sesame seeds and nori strips on top.
- Serve chilled.

- Use a mandoline for even cucumber slices.
- Adjust sugar and vinegar to taste.
