- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced

- 1 bay leaf
Instructions
- Rinse the black-eyed peas under cold water.
- In a pot, heat olive oil over medium heat.
- Add chopped onion and minced garlic. Cook until soft.
- Add black-eyed peas, water, salt, black pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 45 minutes or until tender.
- Remove bay leaf before serving.

- Soak the black-eyed peas overnight for faster cooking.
