- 1 cup dried black-eyed peas
- 1 cup white rice
- 2 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
Instructions
- Rinse the black-eyed peas and soak them overnight.
- Drain the peas and set aside.
- Heat olive oil in a pot over medium heat.
- Add chopped onion and minced garlic, sauté until soft.
- Add the black-eyed peas, water, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add rice and cook until rice is tender and water is absorbed.
- Remove bay leaf and serve hot.
Notes
- Soaking the peas reduces cooking time.
- Adjust seasoning to taste.
- For extra flavor, add diced tomatoes or smoked paprika.
