- 2 cups water

- 1 lb chicken breast, sliced

- 1 tsp garlic powder
Instructions
- Rinse quinoa under cold water and drain.
- Bring 2 cups of water to a boil, add quinoa, and simmer for 15 minutes.
- Heat olive oil in a pan over medium heat.
- Add chicken, season with salt, pepper, and garlic powder, and cook until browned.
- Add mixed vegetables and sauté for 5 minutes.
- Serve quinoa with chicken and vegetables.

- Substitute quinoa with brown rice for variation.
- Use any vegetables of your choice.
