- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken or vegetable broth
- 1/2 cup heavy cream
- 1/2 cup shredded cheddar cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 2 tbsp butter
Instructions
- Place diced potatoes, onion, and garlic in the slow cooker.
- Pour broth over the potatoes.
- Add salt, pepper, and paprika. Stir to combine.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Once potatoes are tender, mash slightly with a fork.
- Stir in heavy cream, cheese, and butter until melted.
- Serve warm.

- For a creamier texture, use an immersion blender.
- Add cooked bacon or ham for extra flavor.
- Store leftovers in an airtight container for up to 3 days.
