- 1.5 lbs boneless, skinless chicken
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 2 tbsp taco seasoning
- 1 tbsp lime juice
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/4 cup chicken broth
- 8 small flour tortillas
- Fresh cilantro (optional)
- Sour cream (optional)
Instructions
- Place chicken in the slow cooker.
- Add bell peppers, onion, and garlic on top.
- Mix taco seasoning, lime juice, cumin, chili powder, and chicken broth in a bowl.
- Pour the mixture over the chicken and vegetables.
- Cover and cook on low for 6 hours or high for 3-4 hours.
- Shred the chicken with two forks.
- Serve on tortillas with fresh cilantro and sour cream if desired.
Notes
- Use corn tortillas for a gluten-free option.
- Adjust spice level by adding more or less chili powder.
- Store leftovers in an airtight container for up to 3 days.
