  • 4 large potatoes, diced

  • 1 bay leaf

Instructions

  1. Place beef stew meat at the bottom of the crockpot.
  2. Add diced potatoes, sliced carrots, and chopped onion.
  3. Pour beef broth over the ingredients.
  4. Season with salt, black pepper, thyme, and bay leaf.
  5. Cover and cook on low for 8 hours or high for 4 hours.
  6. Remove bay leaf before serving.

Notes

  • For a thicker stew, mix 1 tbsp cornstarch with 2 tbsp cold water and stir into the stew 30 minutes before serving.
