Instructions
- Place beef stew meat at the bottom of the crockpot.
- Add diced potatoes, sliced carrots, and chopped onion.
- Pour beef broth over the ingredients.
- Season with salt, black pepper, thyme, and bay leaf.
- Cover and cook on low for 8 hours or high for 4 hours.
- Remove bay leaf before serving.
Notes
- For a thicker stew, mix 1 tbsp cornstarch with 2 tbsp cold water and stir into the stew 30 minutes before serving.
- You can add other root vegetables like parsnips or turnips if desired.
