- 1 lb chicken breast
- 2 cups diced potatoes
- 1 cup chopped carrots
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Place chicken at the bottom of the crockpot
- Add potatoes, carrots, onion and garlic
- Pour chicken broth over ingredients
- Season with salt, pepper and thyme
- Cook on low for 6 hours or high for 3 hours
- Shred chicken before serving
Notes
- Can substitute chicken thighs for breast
- Add other vegetables like celery or peas
- Store leftovers in airtight container for up to 3 days
