- 4 boneless, skinless chicken
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup sliced Kalamata olives
- 1/2 cup crumbled feta cheese
Instructions
- Place chicken in the crockpot.
- In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
- Pour the mixture over the chicken.
- Cover and cook on low for 6 hours or high for 3 hours.
- Add olives and feta cheese in the last 30 minutes of cooking.
- Serve warm with rice or pita bread.
