- 2 lbs boneless, skinless chicken thighs
- 4 carrots, chopped
- 3 celery stalks, chopped
- 1 onion, diced
- 4 garlic cloves, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium heat. Brown chicken thighs for 3-4 minutes per side.
- Place chicken in the crockpot.
- Add carrots, celery, onion, garlic, chicken broth, diced tomatoes, thyme, rosemary, and bay leaf.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Remove bay leaf and season with salt and pepper before serving.
Notes
- For thicker stew, mix 2 tbsp cornstarch with 1/4 cup cold water and stir into the stew 30 minutes before serving.
- Shred the chicken before serving if preferred.
