- 2 boneless, skinless chicken
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup diced tomatoes
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated parmesan cheese
- 1 tbsp olive oil
Instructions
- Place chicken in the crockpot.
- Add orzo, chicken broth, diced tomatoes, onion, garlic, oregano, basil, salt, and pepper.
- Stir gently to combine.
- Cook on low for 4 hours or high for 2 hours.
- Shred chicken and mix back into the orzo.
- Stir in parmesan cheese and olive oil before serving.
Notes
- Shred chicken directly in the crockpot for easier mixing.
- Add extra broth if a soupier consistency is desired.
- Store leftovers in an airtight container for up to 3 days.
